A scallion, also known as a green onion or spring onion, is an onion harvested before it develops a large bulb, featuring long, hollow green stalks and a small, underdeveloped white base. Scallions are low in calories and a good source of vitamins A, C, and K, while also containing fiber. They are used as a flavorful garnish or cooked as a mild vegetable in dishes like stir-fries, scallion pancakes, and are a key ingredient in the traditional Afghan and Persian Passover Seder meal.
